why we don’t have a set menu
When you join us for an evening in the Western Maine mountains, you won’t find a laminated menu waiting at your table. You won’t be choosing between a standard beef entrée or a static fish dish. In fact, until the course arrives in front of you, the full picture of your dinner remains a deliberate surprise.
Instead, you are provided a menu sealed in wax when you arrive. It’s tailored to the offering of the land and your dietary restrictions. You can choose to open it, or let us lead through the culinary adventure with in-depth stories into every ingredient, artistic choice and intention.
People often ask us why we choose to work this way. In a fine dining landscape that often relies on predictability, why leave the menu open to continuous evolution?
For our worker-owned collective, the answer comes down to three core principles: living rhythm with the land, uncompromised hyper-local sourcing, and the art of shared discovery.
Following the 100-Mile Rhythm
The overwhelming majority of what’s served at The Chametz originates strictly within a 100-mile radius. We work directly with heirloom crop growers, regional fisheries, and small-scale mountain foragers.
Nature doesn't operate on a fixed quarterly schedule. A sudden warm week might bring a flood of peak heritage tomatoes; an early frost might shift our focus to winter squash and root cellars. By refusing to freeze our offerings into a rigid, predetermined menu, we honor what the land and local waters are providing at their absolute peak on any given week.
That means that not only do guests not know the menu until right before an experience, but also we don’t always know either.
2. Eliminating Waste, Honoring the Harvest
Standard fixed menus force kitchens to source ingredients in bulk regardless of seasonal availability, often resulting in unnecessary waste when surplus produce goes unused.
Our 7+-course seasonal tasting menu is crafted dynamically around the entire yield of our partner farms. Working closely with local growers means using every part of the harvest—from rare, heirloom grain varieties to wild-foraged mushrooms and delicacies—ensuring a dining experience that respects both the land and the hands that cultivate it.
